Gemlik tipi siyah zeytinlerin hasat edilmesi sonucu, kalibrasyon işlemleri tamamlandıktan sonra salamura suyu (tuzlu su) eklenip, bulunduğu kabın üzerinden baskılama yapılıp, acı suyundan arındırılması sonucu üretilen zeytin çeşididir. Üretimi sonrasında mısır özü yağı ilavesi ile naturel tarzda hazırlanıp sizlere sunulur. Diğer siyah zeytin tiplerine göre, daha etli ve çekirdeği küçüktür.
